Filling what Haywood County Chamber of Commerce President Greg Boothroyd called the "missing link" in downtown Waynesville, Sunburst Market held its grand opening Friday.

The effort is an extension of Sunburst Trout, the Lake Logan aquaculture business that has become known worldwide for its fresh mountain trout available in 15 different product lines.

The Sunburst Market first opened on Montgomery Street, one block off Waynesville's Main Street, and relocated when space came available at 142 N. Main Street.

The new location, operated by Clay and Katie Hughes, allowed for their product line to triple. In addition to the fresh meats, local foods and drink offerings, Sunburst Market now offers a broader selection of fresh vegetables, rice, grains, dry goods, apothecary items and even unique cleaning products.

The space in back will be used for "tastings" prepared by Clay Hughes, who is also a chef in addition to his role in the family business.

"It can be used for small parties, even as a little lounge," he said, noting that once the kitchen is up and running, special meals featuring the local selections available in the store will be prepared.

Katie Hughes is quick to credit childhood friend, Whitney Paris-Lamb and her partner in "M" with putting the design together.

"I explained what I wanted, and she absolutely got it and ran with it," she said.

The market will be open from 10 a.m. to 7 p.m. Monday through Thursday, From 10 a.m. to 8 p.m. Friday and Saturday and from 1 to 7 p.m. Sunday. The hours may be adjusted during the winter months.
